Sauteed Eggplant and Sauteed Green Vegetables
Last night, I had a delicious dish which was sauteed eggplant mixed with tomato, onion, and other spices to make it tasty. I guess it was my tastiest sauteed eggplant that I ever cooked. I am proud of myself and some of it, I shared with my husband. Furthermore, I had also green sauteed vegetables which was collard greens and Chinese cabbage. It was a healthy dinner for me. I love eggplant especially when it is sauteed or fried it with egg or flour. It is such a nostalgic type of dish when I was still living in PI. See my pictures that I attached below.

Boiled Soybeans and Health Benefits of Soybeans
I remember when I was living with my parents back in Philippines, we do boiled the soybeans and eat them as a dish or mixed with veggies or my parents make a milk from it which is fresh and tasty and sweet. I knew some people do not like soybeans since they said as the smell from it but it doesn't bother me and I liked better soybean milk than the regular milk. This afternoon, I did boil the soybeans that my husband and I bought in "Fiesta" market here in Austin. I was happy that I found soybeans since I did not find any soy beans in the store in Florida. I loved soybeans and sometimes I order baby soybeans in the restaurant with short stem attached to the pod which is called the edamame. I loved it especially when it is hot! Anyway, you can see the picture of soybeans that I did boil this afternoon, but before I boiled them, I did soak 1st into the water for at least an hour and boil for almost 1 hour and half. I seasoned them like putting salt, pepper etc. After they are cooked, I had a small bowl which I enjoyed eating them. It was really good.
I searched online what are the benefits of soybeans and I wanted to share what I have read online that soybeans excellent food for diabetes, good for growing children to aid growth and development, high lecithin content and is therefore excellent for mental fatigue and for protection against cholesterol deposits and has been reported that diabetic patients were successfully treated with lecithin.
